Nothing new here. For this lunch I brought couscous with a vegetable sauce, I added some chickpeas for extra protein. My side dish was an Ethiopian cabbage-potato-mix.
As second breakfast and snack I had little turnovers with a feta-leek-filling and a banana.

Tabouleh and Leek
Today's dinner has a kind of Oriental vibe. I brought a container with tabouleh (an Arabic couscous salad) and a Turkish dish of fried Leek. My midmorning snack was a fruit salad with some nuts and seeds

Couscous and Burger
This looks absolutely huge, but that's because I brought a burger for second breakfast and packed all the ingredients separately. In the small container I had some homemade zucchini-salsa.
When planning my lunch, I had a look in the freezer and found this - a second portion of the African corn-stew that I already had weeks ago, this time with couscous. As a side dish I brought some edamame.

Couscous with Ratatouille
I prepared this lunch the night before and in a hurry, so I needed things that were easy and fast.
The main dish was couscous with a ratatouille sauce that was a convenience product, I just had to add vegetables and water.
I brought two different things as snacks - first little breadballs with nuts and seeds. They are quite simple - I unfroze a premade pretzel, cut it into pieces and covered those with the nuts, then I put them ten minutes into the oven - ready.
The strange white thing in the photo is a hardboiled egg. I usually don't eat many eggs, but I had bought some Japanese eggformers some time ago and never used them, so I wanted at least to try them. It didn't really work (the egg should look like a star, not like a blob), probably because my egg was too small. I think I'll try again and then I might pass the shapers on to somebody who eats eggs more frequently, maybe my little niece.

Couscous with Spicy Lentils
For this lunch I made couscous and a spicy, Indian-inspired lentil sauce. As snacks I brought along raw cauliflower and two seitan sausages. Both delicious!

Barley Soup and Fruit Salad with Couscous
For this lunch I made a big portion of soup with pearl barley and lots of winter vegetables.
I had a fruit salad with couscous as dessert.
My midmorning snack was a baguette with kohlrabi carpaccio.

Vegan Bean Soup with Sesame-Cucumber Sandwich
On this day in November I brought sweet couscous for second breakfast in the office.
It's very easy to make: I added not only some hot water, but also a bit of orange juice and orange slices, sugar, cinnamon, sliced almonds and a tablespoon of margarine to the couscous. Delicious.
For my (completely vegan) lunch I had bean soup with a sandwich.
The simple recipe for the bean soup is from my mother: Boil diced potatoes in vegetable stock, then add canned beans of your choice (I had green, red and white beans), add salt and pepper to taste, ready. I also added two sliced soy sausages to make it more hearty. This soup tastes even better after a day or two.
I used the delicious bread that I brought back after visiting my parents in Germany to make a sandwich with sesame spread and cucumber slices.
