Soup and Corn Muffins


Here I've tried a new soup with cauliflower and pasta from an Italian cookbook. I accompanied it by homemade corn muffins.
My midmorning snack were fried skewers with seitan, mini bell peppers and cherry tomatoes.

Pasta with Broccoli Sauce


This simple lunch consisted in a container with pasta plus a creamy broccoli sauce. As a snack I brought along some pieces of apple and little skewers with gouda cheese and cherry tomatoes.

Soup and Pretzel


For this lunch I brought a tomato soup with pumpkin, white beans and little dumplings. I accompanied it with a pretzel - a convenience product that I just put in the oven in the morning. My snack were little skewers with mandarines and pieces of fennel, marinated in a ginger-vinaigrettte.

Fried Bread and Aubergine

This picture might need a bit of an explanation. Below we have little skewers with pototoes etc. for my midmorning snack. I combined the rest of the ingredients for lunch - we have fried bread, fried aubergine (transported separately so the bread would'nt get soggy) and vegan tzatziki in a separate container. Mix everything together and - yummy!

Rice and Salad


For this lunch I brought a spicy rice dish with TVP and peas.
As it seemed a bit pale, I added a colourful salad made of tomatoes, carrots and corn.
As a snack I prepared a sandwich with homemade potato spread and little skewers with grapes, walnuts, dates and smoked tofu.
Today everything was vegan.

A very German lunch



Now, this is a very typical German lunch - potato dumplings with gravy and red cabbage. I have to admit that the dumplings and sauce were convenience products, but I made the cabbage side myself.
I also brought vegetable skewers with fried bread as a snack.
Reality check: To get everything inside the containers, I had to shorten the skewers and cut the potato dumplings in pieces. Here is how the big container looked just before I shut the lid:
