Rice with Spinach

Here we have rice with spinach and macadamia nuts plus watermelon gazpacho. I also brought a cereal bar as a snack and sandwiches with a filling of cheese and fried mushrooms with seitan.

Aubergine with Mushrooms

For this day I tried out some new stuff - my main dish was a mix of fried aubergine and mushrooms on tomato rice (I just cooked the rice in tomato juice, which was nice, but it took much longer than usual). As dessert I made a fruity pudding with orange juice and chia seeds.

Thai Curry and Vegetable Pies

 For this lunch I made a kind of thai curry with curry paste and coconut milk. I used whatever vegetables were at hand. I'm quite proud of the rest of my stuff - a mango lassi made of soygurt and canned mango (quite okay) and those cute little pies. I just cut out circles of puff pastry, put them into a muffin mould and added of filling of finely chopped summer vegetables and tomato paste. Those looked cute and tasted fantastic, I think I did a good job!

Rice and Yellow Stuff


For this lunch I improvised a dish with different types of rice, sundried tomatoes and artichokes. I also brought corn with melted cheese, yummy. My dessert was mango from the can.

Fried Rice and Potato Chips

A big lunch, I had fried rice with omelette strips, little skewers with pineapple + papaya as dessert and homemade potato chips (from the oven) with ketchup as a midmorning snack.

Risotto and Vegan Omelette


For this lunch I tried two recipes from a book about Italian cuisine - risotto with peas and a vegan vegetable omelette. I wasn't keen on the omelette, I'll have to try some other versions to see if I find a vegan recipe that I like. When I wanted to photograph everything, I found that it lacked some colour, so I added a salad made of tomatoes and bell pepper.

Arroz a la cubana


For this lunch I made a dish that's very popular here, it's called "Arroz a la cubana", which means "Cuban rice". It's basically rice with fried tomato passata (which can be bought already prepared) and a fried egg. It's not the most healthy thing in the world, but nice from time to time.
As snacks I brought some grapes and a leftover piece of chocolate-pear cake.

Aburage and Strawberries

On this day I made aburage, Japanese tofu pockets filled with sushi rice. They were accompanied by a side dish of marinated champignons with cherry tomatoes. My snack / dessert was very strawberry-ish - I not only brought some berries, but also a piece of puff pastry filled with marzipan and homemade strawberry jam.

I had a gestalt-workshop last Saturday and had to prepare my food for the day fast. Fortunately I still found a container with stirfry-rice in the freezer, which I accompanied by raw vegetables, a pretzel and a banana.

Kind of Japanese

For this day I made udon noodles with coconut-curry. It was accompanied by my beloved kinpira-carrots. As dessert I brought little homemade fruit bars with cherry-marzipan-flavour. Yummy!
I also had a very hearty second breakfast - onigiri and raw bellpepper sticks.
I had never eaten onigiri until last week - I just never had had the occasion. Then last week a friend took me to this beautiful Japanese cafĂ©: http://www.akashigallery.com/, and I tried my first onigiri. I had always wondered if these were made with plain sticky rice or if they were seasoned with rice vinegar like sushi. The one I tried seemed to be seasoned, although subtly. It had an avocado-wasabi filling, and today I tried to recreate it at home. It turned out quite nicely.

Rice with Vegetables, Lentils and Hummus Rolls

For this lunch I made a colourful rice with fried vegetables and accompanied it by a fruity lentil dish. My midmorning snack were carrot rolls filled with hummus. I wasn't to keen on the rolls because I had to precook the carrots to be able to bend them, and I don't really like the sweetish taste of cooked carrots, unless they are nicely seasoned or combined with something a bit stronger.
Today everything was vegan.

Aubergine Curry and Ricepaper Rolls




I cheated again. Well, if you want to call it cheating. When I'm having dinner at my favourite Indian restaurant, I always ask them for a doggy bag, so here I brought their delicious aubergine curry.
I also made vegetarian jelly as dessert.
My midmorning snack were ricepaper rolls with vegetable filling, Italian style. Again I separated the sticky ricepaper rolls with pieces of carrots.

For this lunch I made the Tomato rice with peas from A vegan taste of Mexico, plus a couple of corn fritters. For second breakfast I had a delicious vegetarian Reuben sandwich with seitan and sauerkraut, accompanied by some raw vegetable sticks.

As it seemed a bit pale, I added a colourful salad made of tomatoes, carrots and corn.
As a snack I prepared a sandwich with homemade potato spread and little skewers with grapes, walnuts, dates and smoked tofu.
Today everything was vegan.

Another Asian Lunch



Today I had fried rice with vegetables and omelet plus mixed vegetables fried with garlic and almond slices. For second breakfast I brought little vegan potato snacks that I had baked in the oven, with a bit of ketchup. Yummy!

Indian Lunch



Today I cheated - my dal isn't homemade, these are leftovers from an Indian take-away meal. But I used it to create a theme - I made vegan samosas and curry-cauliflower.

The curry-cauliflower was invented by my boyfriend and is very easy to make:
Separate the cauliflower in little florets and fry them with oil in a pan until they start to brown slightly. In the meantime, mix a small quantity of yellow curry paste with water. Pour the mixture over the cauliflour florets in the pan, go on frying and stir regularly to coat the florets from all sides. The water will evaporate and you will end up with delicious spicy and slightly crunchy cauliflower.
My second breakfast was a smoothie made of fruit (kiwi, apple, orange, some pomegranate seeds), a tomato, a bit of oatmeal and ground almonds plus a splash of agave syrup.
